Although I loved every dish—each one prepared with Oaxacan ingredients using Japanese techniques—my favorite plates were a set of crispy crab gyozas and a refreshing cold soba noodle soup. After dinner, I use the light of the moon to guide my steps to Cobarde, a sand-floor mezcal bar where I end my evening with a glass of silky madrecuixe.
